Recipe: Apple Crumb Coffeecake
1 3/4 cups flour
1/2 cup sugar
1/2 tsp salt
2 pkgs yeast
1/2 cup milk
1/3 cup butter
2 eggs
4 apples
2/3 cup sugar
1/2 cup flour
2 tsp cinnamon
6 tbsp butter
Heat milk and margarine in saucepan to warm. In mixing bowl place 1 cup flour, sugar, salt, and yeast. Add warm liquids to dry ingredients and beat 2 minutes at medium speed of electric beater. Add eggs and 1/2 cup flour to make thick batter. Beat at high speed 2 minutes. Stir in enough additional flour to make stiff batter. Spread evenly in well-greased 9 inch square pan. Pare apples and arrange slices evenly over batter. Combine 2/3 cup sugar, 1/2 cupflourr, cinnamon, and 6 tablespoons margarine. Mix until crumbly. Sprinkle over apples. Cover, let rise in warm place about 1 hour. Bake at 375° F for 35 to 40 minutes. Cool in pan 10 minutes. Remove from pan and cool on wire rack. |
