Recipe: Applesauce Cookies
- 2 cups whole wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 cup butter
- 1 cup sugar
- 1 tsp grated lemon rind
- 1 egg, beaten
- 1 tsp vanilla extract
- 1 cup applesauce
- 1 cup finely chopped walnuts
- 1/2 cup raisins
- Preheat oven to 350° f.
- Sift flour together with the baking soda, salt, and spices.
- Cream butter with sugar; stir in lemon rind, egg, vanilla extract and applesauce.
- Blend well, then add walnuts and raisins. Stir well.
- Drop batter by the spoonfull onto a greased cookie sheet about 2 - 2/12 inches apart.
- Place into oven and bake for 20 minutes or until cooked through. Remove cookies from oven, allow to sit for 5 minutes, then move cookies from cookie sheet to a wire rack and allow to cool.
