Recipe: Arizona Mountain Soup
- 1 1/4 cups dry pinto beans
- 4 slices bacon, chopped
- 2 medium onions, finely chopped
- 1/4 tsp coarse ground garlic salt
- 16oz canned tomatoes
- 1 1/2 cups cooked brown rice
- 2 tsps salt
- 1/2 tsp paprika
- 1/4 tsp pepper
- Rinse beans; soak overnight in 3 cups water, don't drain.
- Simmer, covered 2 hours.
- Drain, reserving liquid.
- In same pan , cook bacon until almost crisp.
- Add minced onion and garlic.
- Stir in cooked beans , tomatoes, cooked rice, salt, paprika and pepper.
- Add reserved bean liquid and enough water to make 4 cups.
- Bring to a boil.
- Cover and simmer 1 hour.
- If soup is too thick, add more water.
