Recipe: Asparagus Egg Casserole
- 1/4 cup butter or margarine
- 1/4 cup flour
- 2 cups milk
- 1 cup grated sharp Cheddar cheese
- 1/4 tsp fine sea salt
- pinch pepper
- 2 cups cooked (not overcooked) asparagus
- 8 hard-cooked eggs, sliced
- 1/2 cup bread cubes
- 3 tbsps melted butter
Preheat oven to 375°. Melt butter in skillet, add flour and cook for 1 minute. Slowly add milk and cook on medium heat stirring regularly. Cook until sauce starts to thicken. Add cheese and seasonings. Stir until cheese is melted. Place asparagus (in 1" pieces) and egg slices in greased casserole. Pour cheese sauce over this. Brush bread cubes with melted butter and sprinkle over cheese sauce. Bake about 1 5 minutes at 375°. Serves 4.
