Recipe: Baked Beans Supreme

Recipes using Gourmet Malabar Table Grind Black Pepper

• 1 large onion, chopped, about 1 cup
• 1 tbsp dijon-style mustard
• 1 green pepper, cut into 1 inch pieces
• 1/4-1/2 tsp pepper
• 1 clove garlic, minced
• 17 oz. can lima beans, drained
• 2 tbsps water
• 15½ oz. can red kidney beans, drained
• 15½ oz. can butter beans, drained with molasses sauce and bacon
• 8 oz. can sliced water chestnuts, drained
• 15 oz. can garbanzo beans, drained
• 2 tbsps brown sugar
• 1 tbsp Worcestershire sauce
• 3/4 cup catsup

If using a low-watt microwave oven, first check the oven cavity to be sure it will hold a 3 qt. microwave-safe casserole. In a 3 qt. microwave-safe casserole combine onion, green pepper, garlic and water. Microwave, covered on 100% power (high) for 4-5 minutes, or until onion and pepper are tender, drain. Stir in lima beans, undrained butter beans, kidney beans, garbanzo beans, water chestnuts, catsup, brown sugar, mustard, Worcestershire sauce and pepper. Cook, covered, on high for 10-1 2 minutes, (low-watt ovens: 20-22 minutes) or until hot, stirring after every 5 minutes. Makes 1 5 servings.

If a conventional oven is used bake at 350° for 1 hour. Also, ingredients can be combined ahead of cooking to allow flavors to combine. If you like, you may use barbecue sauce instead of catsup or a combination.
