Recipe: Baked Eggplant

Recipes using Tabasco Sauce

• 1 medium eggplant
• 2 eggs, beaten
• 8 to 10 saltine crackers, crushed
• 3/4 cup milk
• dash hot sauce
• salt and pepper to taste
• 1 tbsp melted butter or margarine
• 1/2 cup shredded sharp Cheddar cheese

1. Preheat oven to 350° F.
2. Peel and dice eggplant.
3. Cook slowly in small amount of boiling water for 15 to 20 minutes or until tender; drain well.
4. Combine eggs, crackers, milk, hot sauce, salt, pepper, butter and cheese.
5. Stir in cooked eggplant.
6. Spoon into well greased 1 1/2 qt casserole dish.
7. Bake for 30 minutes.
