Recipe: Baked Potato Soup

Ingredients in Baked Potato Soup

• 4 large baking potatoes
• 2/3 cup butter or margarine
• 2/3 cup all purpose flour
• 6 cups milk
• 3/4 teaspoon salt
• 1/2 teaspoon pepper
• 4 green onion, chopped and divided
• 1 cup Hormel Real Crumbled Bacon
• 1 ¼ cups shredded Sharp cheddar cheese, divided
• 8 ounce carton sour cream

To Make Baked Potato Soup

1. Preheat oven to 400°.
2. Wash and prick potatoes with fork.
3. Bake potatoes for 1 hour or until done.
4. Let potatoes cool.
5. Cut potatoes in half lengthwise and scoop out pulp.
6. Melt butter or margarine in heavy saucepan over low heat.
7. Add flour; stir until smooth.
8. Cook 1 minute stirring constantly.
9. Gradually add milk, cook over medium heat, stirring constantly until thick and bubbly.
10. Add potato pulp, salt, pepper, 2 tablespoons green onion, ½ cup bacon and 1 cup cheese to heated mixture.
11. Cook until thoroughly heated.
12. Stir in sour cream.
13. Add extra milk for desired thickness.
14. Serve with remaining onion, bacon, and cheese for garnish.
