Recipe: Baked Sauerkraut
- 2 pounds sauerkraut, washed well and drained
- 1 pound can tomatoes, drained and chopped, reserving juice
- 1 cup packed brown sugar
- 4 slices bacon, cooked and crumbled
Preheat oven to 300°F. Spread washed and drained sauerkraut in a 9x12x2" pan which has been sprayed with Pam. Cover sauerkraut with the tomatoes, then sprinkle brown sugar over tomatoes. Pour the reserved tomato juice over mixture. Sprinkle cooked crumbled bacon over top of casserole. Bake in a 300°F oven for 2 hours. Optional Additions: ½ tsp dill seed, ½ tsp celery seed, ½-1 cup sliced onions, 1 tsp ground pepper, or 1 tsp seasoned pepper.
