Recipe: Banana Bread - II
1/2 cup oil
1 cup sugar
2 eggs
1/2 tsp salt
1/2 tsp baking soda
1 cup very ripe banana, mashed
2 cups unbleached* King Arthur or Pillsbury All Purpose flour.
1/2 cup chopped nuts
1/2 tsp vanilla
1. Preheat oven to 375 degrees.
2. Mix ingredients in a large bowl in the order listed. Mix well.
3. Pour into a 9 x 5 inch loaf pan, and bake about 1 hour until done.**
* Unbleached flour is natually whitened by aging and has the best taste. King Arthur and Pillsbury Unbleached All Purpose flours are our favorites for overall taste in multiple uses including bread making.
