Recipe: Bean Mushroom Medley
- 8 oz fresh green beans, cut into 1 inch pieces
- 2 carrots, cut crosswise into halves, then int 3/8 inch strips
- 1 medium onion, sliced
- 8 oz fresh mushrooms, cut into 1/4 inch slices
- 1/4 cup butter or margarine
- 1 tsp salt
- 1/4 tsp garlic powder
- 1/8 tsp white pepper
- Heat 1 inch water to boiling in 2 qt saucepan.
- Add beans and carrots; heat to boiling, reduce heat.
- Cover and simmer, stirring occasionally, until almost tender; drain,
- Cook and stir onion and mushrooms in butter in skillet over medium heat until almost tender, about 5 mins, reduce heat.
- Cover and cook 3 mins.
- Stir in beans, carrots, salt, garlic powder and pepper.
- Cover and cook over medium heat 5 mins.
