Recipe: Beef Stroganoff au Perry
- 2 lbs lean sirloin, cut in 1/4 strips
- 1/4 lb butter
- 6 med onions, thin sliced
- 2 lbs fresh mushrooms, cleaned and thin sliced
- 2 tbsp tomato paste
- 2 cups dairy sour cream
- 1 1/2 tsp sea salt
- 1/2 tsp fresh ground pepper
- 1/2 cup marsala (or Sherry wine)
Cook sirloin in 4 tablespoons butter. Saute onions 10 minutes in 2 tablespoons butter. Saute mushrooms 5 minutes in remaining 2 tablespoons butter. Mix all together and add tomato paste, sour cream and seasoning. Cook thoroughly. Cover, cook over low heat 30 minutes, add marsala wine. Simmer 5 minutes longer. Serve over noodles or wild rice. Serves 6 or more. |
