Recipe: Blueberry Bread
- 1 3/4 cups flour
- 1/3 cup granulated sugar
- 1/3 cup packing brown sugar
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg, beaten
- 1 orange, juice and rind
- 2 tbsps butter or margarine
- Boiling water
- 1 cup blueberries
- 1 cup chopped nuts (optional)
- Preheat oven to 350 degrees
- Grease a loaf pan.
- Stir one beaten egg in measuring cup.
- Add juice and rind of orange and butter to measuring cup
- Add boiling water to make 3/4 cup of liquid in measuring cup.
- Stir liquid into dry ingredients.
- Combine blueberries, nuts and 1/4 cup flour.
- Add fruit mixure to batter folding very gently but thoroughly.
- Pour batter into greased loaf pan.
- Bake for 1 hr.
