Recipe: Brandied Almond Squares
Topping
- 1/2 cup butter
- 1/4 cup sugar
- 1/4 cup cognac
- 2 tbsp honey
- 1 tsp almond extract
- 1 cup chopped almonds
Base:
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup soft butter
- 1 egg, slightly beaten
- Combine all ingredients of topping in saucepan. Bring to full boil stirring. Set aside to cool slightly.
- Preheat oven to 350° F.
- Sift together flour, sugar, baking powder and salt.
- With pastry blender blend in butter until mixture looks like coarse oatmeal.
- Add eggs and work mixture till it holds together.
- Press evenly into 10x15” jellyroll pan and pour topping over. Spread topping evenly over mixture.
- Bake 20 to 25 minutes or until golden.
- Cool in pan 15 minutes.
- Cut into squares and finish cooling on a rack.
