Recipe: Butternut Squash Soup

Ingredients in Butternut Squash Soup

• 1 large butternut squash, peeled, seeded and diced
• 2 cups chicken stock
• 1 cup diced potatoes
• 1 medium onion, diced
• 1/2 teaspoon prepared fresh chopped garlic
• 2/3 cup cream
• 1 teaspoon dried dill weed
• 1 teaspoon cumin
• salt and pepper to taste

To Make Butternut Squash Soup

1. In a large soup pan simmer for 15 minutes squash, chicken stock, potatoes, onion, and garlic.
2. Puree mixture in blender (in batches if necessary) until smooth.
3. Return pureed mixture to soup pot.
4. Add cream, dill weed, cumin, salt and pepper to mixture; mix well.
5. Heat and Serve Soup.
