Carrot Cake III Ingredients

• 2 cups sugar
• 4 eggs
• 1 1/2 cups oil
• 2 cups flour
• 3/4 tsp ground cinnamon
• 2 tsps baking soda
• 1 tsp salt
• 3 cups grated carrots
• 2 tsps pure vanilla extract

To make Carrot Cake III

1. Preheat oven to 350° F
2. Beat together the sugar, eggs and oil at medium speed for 3 minutes.
3. Sift flour, cinnamon, soda and salt; add to sugar mixture.
4. Beat in grated carrot and vanilla.
5. Bake for 35-40 minutes.
6. For icing, blend with mixer until smooth the following.

Cream Cheese Frosting for Carrot Cake

• 1 stick butter, softened
• 8 oz pkg cream cheese, softened
• 2 cups confectioners' sugar
• 1 tsp pure vanilla extract

Garnish top of Carrot Cake with walnuts, if desired.
