Recipe: Carrot Cake with Icing
- 2 cups sugar
- 2 cups flour
- 2 tsps baking soda
- 2 1/2 tsps cinnamon
- 1 1/2 cups vegetable or canola oil
- 4 eggs
- 3 cups finely grated carrots, uncooked
- your favority nut (optional)
- Preheat oven to 325 degrees
- Sift together flour, baking soda and cinnamon.
- Mix sugar and oil together.
- Beat eggs and add to oil mixture.
- Add carrots, mixing thoroughly.
- Add part of flour mixture mixing after each addition.
- Fold in nuts if desired
- Pour into two 9 inch round cake pans.
- Bake for 35 minutes.
- Cool cakes on wire racks
ICING
- 8oz pkg cream cheese, softened
- 1 box confectioners sugar
- 2/3 stick of butter or margarine
- 1 cup chopped pecans
- 2 tsps vanilla
- Cream all ingredients together and spread on one layer of cooled cake.
- Top with remaining layer.
- Spread icing over top and along sides
