Recipe: Cauliflower Crab Chowder
- 10 oz pkg frozen cauliflower
- 3 tbsp butter
- 1 3/4 cups chicken broth
- 3 oz cream cheese, cubed
- 2 tbsp parsley, chopped
- 1/4 tsp Mediterranean Sea Salt
- 1/4 cup white wine
- 1/2 cup water
- 3 tbsp flour
- 1 1/4 cup milk
- 2 tbsp pimento, chopped
- 2 tbsp chives, chopped
- 6oz crab delights cut up
- Combine cauliflower and water in a saucepan.
- Bring to a boil. Cover, reduce heat, and simmer about 4 minutes DO NOT DRAIN.
- Cut up larger pieces of cauliflower. Set aside. Melt butter in saucepan. Stir in flour. Add broth and milk.
- Cook and stir till thick and bubbly. Stir in undrained cauliflower, cream cheese, pimento, parsley, chives, and salt. Cook and stir over low heat until cheese melts.
- Stir in crab and wine. Heat thoroughly but do not boil. Even if you don't like seafood or cauliflower, you'll like this soup
