Recipe: Cauliflower Soup
- 1 tbsp dried minced onion
- 1/4 cup butter or margarine
- 2 tbsps flour
- 4 cups milk, scalded
- 1 tsp salt
- dash of pepper
- 1 medium head of cauliflower, cooked and coarsely chopped
- 1 cup shredded sharp Cheddar cheese
- Melt butter in saucepan.
- Blend in flour with butter and cook 3 mins without browning; stir often.
- Add scalded milk, seasonings and cauliflower.
- Cook until smooth and slightly thick, stirring frequently.
- Just before serving add shredded cheese and stir until melted.
