Recipe: Cheddar Cheese-Spinach Quiche
- 1 bunch fresh spinach or 1 package frozen chopped spinach
- 4 tbsp butter, melted
- 1 cup shredded Cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 cup heavy whipping cream
- 3 eggs, beaten
- 1/8 tsp garlic powder
- 1/8 tsp white pepper
- 1 ready made baked pie crust
- Preheat oven to 375° F.
- If using fresh spinack, cook until leaves begin to wilt, then chop. For frozen spinach, cook according to package instructions.
- Squeeze out excess water from spinach.
- Combine cooked spinach with butter, Cheddar and Monterey Jack cheeses.
- Line bottom of the cooked pie crust with the spinach mixture.
- Combine the eggs, whipping cream, pepper, and garlic; Mix well. Pour over top of spinach mix.
- Place pie pan on top of a cookie sheet, and place in oven. Bake for 40 minutes or until done. Test for doneness with a knife - knife will come out clean when inserted and removed from the custard.
