Recipe: Cheese Stuffed Meatloaf
- 1/2 lb mozzarella cheese
- 2 lbs lean ground beef
- 2 eggs
- 1/2 cup packaged seasoned bread crumbs
- 1 cup tomato juice
- 1/2 tsp sea salt
- 1 tsp oregano
- few shakes pepper
- 2 small onions, minced
- 8 paper thin slices ham
Grate mozzarella cheese and set aside. Combine ground beef, eggs, bread crumbs, tomato juice, salt, oregano and pepper. Saute onions in a little oil until golden brown. Add to meat and mix well. Turn out on a sheet of aluminum foil. Flatten
to an oblong about 1 inch thick. Place ham on oblong, keeping slices about 1 inch from edge. Sprinkle cheese on ham. Use foil to fold meat over ham and cheese, closing all openings. Turn loaf from foil into loaf pan. Pat with fingers to fill corners of pan and shape loaf to completely fill pan and rounded on top. Bake 325° F oven for 60-70 minutes (8" x 5" x 3" pan) Serves 6-8.
