Recipe: Chicken Gaucho
- 8 chicken thighs, skinned
- 2 tbsp dark chili powder
- 1 tsp sea salt
- 1 tsp Vegit
- 1/4 tsp ground black pepper
- 1 cup biscuit mix
- 2 cups biscuit mix
- 2 tbsp cooking oil
- 1/2 cup water
- 8 peach halves
- Put the oil in a large shallow baking pan.
- Mix 1 cup biscuit mix, chili powder, salt, Vegit, and black pepper.
- Roll chicken in mix and place in the baking pan with the smooth, rounded side down.
- Bake, uncovered, for 35 minutes in preheated oven at 425° F.
- Mix 2 cups biscuit mix and water into soft dough.
- Turn chicken over. Scrunch up the parts together leaving 1 end of the baking pan empty.
- Place dough in about 10 gobs on the pan.
- Place a peach half on each piece of chicken.
- Bake until biscuits are done, about 15 minutes.
