Recipe: Chicken A La Romano
- 1 whole chicken, split in halves
- 1/4 cup olive oil
- 1/8 tsp of crushed red pepper, or to taste
- 1 tsp dried oregano
- 1/4 cup finely grated Romano cheese
- 1 tsp salt
- 1 clove garlic, chopped
- 1 large can tomatoes
- 1/3 cup chopped parsley
- Preheat oven to 350 degrees
- Place chicken halves in a shallow baking pan.
- Place chicken in oven and cook for 15-20 mins or until water of chicken is absorbed.
- Remove chicken from oven.
- Sprinkle chicken with salt, pepper and red pepper.
- Mix garlic, parsley and oregano together and sprinkle over chicken.
- Cover with canned tomatoes and sprinkle with grated Parmesan cheese.
- Spread olive oil over chicken.
- Return chicken to oven and bake uncovered 1 to 1 1/2hrs, or until tender.
