Recipe: Chicken and Walnuts
- 2 whole boneless chicken breasts
- 2 slices ginger root, chopped
- 1 tsp cornstarch
- 2 tsp soy sauce
- 1/2 tsp salt
- 1 cup raw peanuts
- 1/4 cup canola oil
- 3 or 4 dried chili peppers
- 1/2 tsp sugar
- 1 tsp rice wine vinegar
- Marinate chicken in mixture of ginger, cornstarch, soy sauce and salt.
- Stir-fry peanuts in oil until golden; remove.
- Stir-fry chili peppers in oil for a few minutes; remove and discard.
- Stir-fry marinated chicken until golden, about 2 mins.
- Add sugar, vinegar and rest of ingredients and heat thoroughly.
