Recipe: Chicken Gumbo
- 1/4 lb salt pork (use bacon if salt porks isn't on hand)
- 1 large onion, chopped
- 1 lb package frozen okra
- 2 - 3 bay leaves
- 1 - 2 qts chicken broth
- 1 cup chicken meat, cut into 1" chunks
- Sea Salt
- White pepper, cayenne pepper
- 1 small can whole kernel corn
- 1 small can tomato sauce
- 1 tsp celery seed
- Fry salt pork (or bacon) until brown.
- Add 2 tbsp flour and brown in the pork drippings until caramel brown
- Add onion, and fry until transparent.
- Add okra and fry for about 3 minutes.
- Add chicken broth and chicken pieces.
- Add tomato sauce, corn, and all seasonings
- Cook slowly about 2 1/2 hours. After about 1 hour, taste for flavor and add more seasonings if needed.
- Serve Gumbo soup over cooked rice.
