Recipe: Chicken Scallopine with Zucchini

Chicken Scallopine with Zucchini Ingredients

  • 1/2 cup flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 boneless chicken breasts
  • 1/2 cup butter or margarine
  • 1/2 cup walnuts or pine nuts
  • 3 zucchini, sliced
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 2 cups light cream
  • 1/4 cup grated Parmesan cheese

To make Chicken Scallopine with Zucchini

  1. Mix all but 2 tbsps flour, salt and pepper in bowl.
  2. Pound chicken breasts to flatten them.
  3. Dip chicken breasts in mixture and press firmly to coat; shake off excess and chill.
  4. In large skillet, heat butter until it sizzles.
  5. Saute chicken breasts 5 mins on each side; remove and keep warm.
  6. Add nuts to pan and saute lightly; remove.
  7. Add zucchini slices and saute 3 to 4 mins.
  8. Toss nuts and zucchini together and arrange on platter, topping with chicken breats.
  9. Make sauce by stirring reserved 2 tbsps flour, oregano and basil into pan drippings.
  10. Stir in cream and grated cheese.
  11. Season to taste with salt and pepper.
  12. Simmer, stirring until thick and bubbly, about 5 mins.
  13. Pour sauce over chicken breasts; sprinkle with chopped parsley.
  14. Serve with extra sauce.
