Recipe: Chocolate Velvet Banana Pie
- 6 ounces semi-sweet chocolate bits
- 1/4 cup sherry
- 3 tbsp sugar
- 2 tsp instant powdered
- coffee
- 1/3 tsp salt
- 1/4 tsp cinnamon
- 4 egg yolks
- 4 egg whites
- 2 bananas
- sherry
- Line a 9 inch pie plate with flaky pastry.
- Bake the shell let it cool and chill it.
- In the top of a double boiler, combine the chocolate bits, 1/4 cup sherry, sugar, powdered coffee, salt and cinnamon.
- Cook the chocolate mixture over hot water, stirring until it is well blended and the chocolate is melted.
- Remove the pan from the heat and let the mixture cool.
- Beat in the egg yolks, one at a time until they are thoroughly blended.
- Beat the egg whites until they are stiff but not dry and fold them gently into the chocolate mixture.
- Peel and slice the 2 bananas and sprinkle them with sherry.
- Arrange the slices of banana in the bottom of the chilled pie shell and fill the shell with the chocolate mixture.
- Chill the pie until it is set and garnish with thin slices of bananas.
