Recipe: Chocolate Velvet Banana Pie

• 6 ounces semi-sweet chocolate bits
• 1/4 cup sherry
• 3 tbsp sugar
• 2 tsp instant powdered
• coffee
• 1/3 tsp salt
• 1/4 tsp cinnamon
• 4 egg yolks
• 4 egg whites
• 2 bananas
• sherry

1. Line a 9 inch pie plate with flaky pastry.
2. Bake the shell let it cool and chill it.
3. In the top of a double boiler, combine the chocolate bits, 1/4 cup sherry, sugar, powdered coffee, salt and cinnamon.
4. Cook the chocolate mixture over hot water, stirring until it is well blended and the chocolate is melted.
5. Remove the pan from the heat and let the mixture cool.
6. Beat in the egg yolks, one at a time until they are thoroughly blended.
7. Beat the egg whites until they are stiff but not dry and fold them gently into the chocolate mixture.
8. Peel and slice the 2 bananas and sprinkle them with sherry.
9. Arrange the slices of banana in the bottom of the chilled pie shell and fill the shell with the chocolate mixture.
10. Chill the pie until it is set and garnish with thin slices of bananas.
