Recipe: Ciopinno
- 1 1/2 pounds sea bass or other firm fleshed fish
- 1 pound shrimp
- 12 medium clams or mussels steamed
- 1/4 pound dried mushrooms
- 1 lobster or Dungeness crabs
- 1/2 cup olive oil
- 3 to 4 tomatoes peeled, seeded, chopped
- 1 green pepper
- 1 large onion chopped
- 1 tsp minced minced
- 1/4 cup chopped parsley
- 1/2 cup tomato puree
- 2 cups red wine
- salt and freshly ground
- white pepper
- Shell and devein shrimp leaving tail.
- Scrub clams and steam for about 6 minutes in 1/2 inch salted water.
- Clean crabs or lobster.
- Heat oil in large kettle.
- Add vegetables.
- Cook for 4 minutes.
- Add tomato puree, wine, and clam juice.
- Season with salt and white pepper.
- Heat for 30 minutes.
- Add shrimp and lobster.
- Cook in the sauce for 10 minutes. Then add the fish and cook for 5 minutes more.
- When finished add the steamed clams.
