Recipe: Cockaleekie
- 1 lb leeks, washed, trimmed, halved lengthwise and sliced 1/2" thick
- 1 tbsp butter
- 1 quart chicken broth
- 1/2 tsp sea salt
- 1/2 tsp white pepper
- 1/2 cup diced, cooked chicken meat
- 4 to 6 whole or coarsely chopped pitted prunes
- 2 cups cubed, cooked potatoes
- 1 tsp minced parsley
- Stir fry leeks in butter in a saucepan over moderately low heat 2 to 3 minutes.
- Add all remaining ingredients except parsley.
- Cover and simmer 10 minutes. If desired, thicken with a roux of butter and flour.
- Sprinkle with parsley and serve.
