I would've made it from scratch but I am still working on cleaning out my pantry and I had one box mix left and thought it was the perfect time to finally use it up.

Gosh I haven't made a banana bread for quite some time. It sounds really good right now. Anyhow about your situation I think you might have put to many bananas. Or not sure if this is a myth but I heard that if you vacumn while you are baking that the vibrations do soemthing to the cake or breads. I personally haven't had this happen but then I don't vacumn while I am baking. Has anyone else heard of this?

I've heard of that as well. Sort of an old wives tale but yet it can be true. I was brought up where you didn't even walk in the kitchen until the cake was done so that you don't cause it to fall. Maybe it was just a way to keep everyone out of the kitchen so that the cook/baker could get their work done. Never touch the bread dough that is rising in the bowl until ready to punch down either. Still today - no one can walk in the kitchen until the cake is out of the oven in my house. Old habits I guess............

My mom is that way about cakes too, Mama. I'm not too worried about it at my house though.... I just tell everyone that if they want some cake/bread/brownies/whatever I'm baking they have to stay out & keep the baby out while the oven is on. Once its off, they can come in. I have been known to 'forget' to tell them when I turn the oven off so I can have some of the cookies or whatever before they come in & eat them all. LOL
