Recipe: Crab Imperial
- 1 lb crabmeat
- 1 tbsp butter
- 1 tbsp flour
- 1/2 cup milk
- 1 tsp instant minced onion
- 1 1/2 tsps Worcestershire sauce
- 2 slices white bread (crusts removed)
- 1/2 cup mayonnaise
- 1 tbsp lemon juice (1/2 lemon)
- 1/2 tsp salt
- dash pepper
- 2 tbsps butter
- paprika (for sprinkling on top)
- Remove all cartilages from crabmeat.
- In pan melt butter; mix in flour and cook for 1 minutes on medium heat.
- Slowly add milk, stirring constantly to keep mixture smooth and free from lumps.
- Cook, stirring over medium heat until mixture comes to a boil and thickens.
- Mix in onion, Worcestershire sauce and bread crumbs; cool.
- Fold in mayonnaise, lemon juice, salt and pepper.
- In another pan heat butter until lightly browned.
- Add crabmeat and toss lightly.
- Combine with sauce mixture.
- Put mixture in individual shells or 1 pt casserole, greased.
- Sprinkle paprika on top.
- Bake until hot and bubbly, 15 to 20 minutes.
- Lightly brown on top.
