Recipe: Crab with Peppers and Corn Skillet
- 1 tbsp olive oil
- 1 medium green pepper, chopped
- 1/2 medium red pepper, chopped
- 1 can Mexican style corn, drained
- 2 tbsps fresh lime juice
- salt and pepper to taste
- 1-2 green onions, chopped
- 8 oz artificial crab meat chunks
- 1/4 tsp fresh chopped garlic
- 1 tbsp dried Cilanto
- 8 oz pasta, cooked
- Heat oil in skillet, add onion and peppers and saute over medium heat until tender.
- Turn heat to high and add crab and corn.
- Stir fry until heated through.
- Turn off heat and add the rest of the ingredients.
- Toss with the hot pasta.
- Serve immediately.
