Recipe: Cradle Cake
- 2 cups sifted flour
- 3 tsp baking powder
- 1 tsp salt
- 2 cups sugar
- 1/2 cup butter
- 4 egg yolks
- 4 egg whites
- 1 cup pecans, chopped
- 1 square grated chocolate
- 3/4 cup milk
- 1 tsp vanilla
- Beat egg whites until stiff.
- Add 1 cup sugar gradually beating until they stand in stiff glossy peaks.
- Fold in pecans and chocolate. Line bottom of well-greased tube pan with wax paper.
- Spread meringue over bottom and 3/4 up sides.
- Sift flour together with other dry ingredients.
- Cream butter; add remaining cup of sugar.
- Add egg yolks; beat well.
- Combine milk and vanilla.
- Add alternately with dry ingredients to creamed mixture.
- Pour into meringue-lined pan.
- Bake at 325° F. for 65 to 75 minutes. Cool in pan 20 minutes before turning out.
