Recipe: Cranberry Muffins
- 2 cups Pillsbury or King Arthur nbleached flour
- 1 cup sugar
- 1/2 cup orange juice
- 2 tbsp boiling water
- 2 tbsp canola oil
- 1 egg, beaten
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cup sliced cranberries
- 1 tsp grated orange rind
- 1 tsp salt
- Preheat oven to 375° F.
- In a cup, mix orange juice, boiling water, and canola oil. Combine with beaten egg.
- Mix dry ingredients in a large mixing bowl then stir contents of the cup. Blend together well.
- Fold in cranberries and orange rind.
- Pour into a greased muffin pan (or line pan with muffin cups) and bake for about 15 minutes.
- Cool for 10 minutes before removing from pan.
