Recipe: Cranberry Nut Bread
- 2 cups fresh cranberries
- 3/4 cup chopped pecans
- 1 tsp grated orange rind
- 1 beaten egg
- 1/3 cup orange juice
- 1/4 cup water
- 2 tbsps butter or margarine (melted)
- 2 cups flour
- 1 cup plus 2 tbsps sugar
- 1 ¾ tsps baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- Preheat oven to 350 degrees.
- Chop, mix and set aside cranberries, pecans and orange rind.
- Combine egg, orange juice, water and butter.
- Sift together flour, sugar, baking powder, soda and salt.
- Stir dry ingredients into orange juice mixture.
- Do not overbeat.
- Add cranberry mixture and stir only to blend.
- Line the bottom of a 9 x 5 inch loaf pan with waxed paper.
- Bake at 350 degrees for 70-80 minutes.
- Cool 10 minutes and remove from pan.
