Recipe: Curry Mayonnaise



 

Recipes using McCormick Curry Powder

 

  • 2 eggs
  • 2 tsp Dijon mustard
  • Pinch salt
  • 1 tbsp curry powder
  • 1/8 tsp ground cumin
  • Pinch of ground turmeric
  • 2 tbsp minced fresh chives
  • 2 tsp white wine vinegar
  • 1/4-1 cup peanut oil
  • 2 cloves garlic, crushed to a paste
  • Freshly ground pepper
  1. Combine eggs, vinegar, mustard, and salt in a blender or food processor.
  2. Process until smooth, about 30 seconds.
  3. With motor running, add oil in slow steady stream; continue to process until mixture is thick and smooth -- don't add any more then needed.
  4. Add curry powder, garlic, cumin, turmeric, and pepper to taste; process about 10 seconds.
  5. Taste for seasoning and adjust if necessary.
  6. Transfer mayonnaise to small bowl, fold in chives.
TIP: Can be prepared up to 5 days ahead of time. Store, tightly covered in refrigerator. Do not fold in chives until serving time.
