Recipe: Easy Carrot Cake
- 2 eggs
- 2/3 cups canola oil
- 1 cup firmly packed brown sugar
- 1 cup whole wheat flour
- 1 tsp ground cinnamon
- 1 tsp sea salt
- 1 1/4 tsp soda
- 1 cup grated carrots
Cream Cheese Frosting
- 1 1/2 oz cream cheese
- 1/4 cup soft butter
- 2 cups powdered sugar
- 1/2 tsp grated orange peel
- 1/2 tsp vanilla extract
- In a medium bowl lightly beat eggs; add oil and sugar and blend.
- Stir the dry ingredients together in another bowl.
- Stir dry ingredients into egg mixture just until blended.
- Stir in carrots and walnuts.
- Pour into a greased 8" square pan and bake in a 350° oven for 30 to 35 minutes.
- Cool and frost. Serves 9.
To make frosting:
- Cream together cream cheese, butter, powdered sugar, orange peel, and vanilla.
- Cream together.
