Recipe: Eggnog Bread
- 2 eggs
- 1 cup sugar
- 1 cup dairy eggnog (fresh, not canned)
- 1/2 cup butter, melted
- 2 tsp rum extract
- 1 tsp vanilla extract
- 2 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- Preheat oven to 350° F.
- Grease bottom only of a 9 x 5 inch loaf pan.
- Beat eggs in a large bowl. Add sugar, eggnog, butter rum & vanilla extracts, then blend well.
- Add flour, baking powder, salt, and nutmeg, stirring just until dry ingredients are moistened.
- Pour into the greased pan.
- Bake at 350° F for 45 to 50 minutes or until a toothpick inserted in center comes out clean.
- Cool 10 minutes; remove from pan. Place on a wire rack until cooled completely.
