Recipe: English Muffin



 

Recipes using Fleischmann's Yeast

 

  • 2 cups milk
  • 1/4 cup sugar
  • 1 tbsp salt
  • 1/4 cup butter
  • 1 egg, beaten
  • 1 tsp sugar
  • 1/2 cup lukewarm (about 100 ° f)
  • 1 tbsp active dry yeast
  • 6 1/2 cups flour
  1. Scald the milk.
  2. Pour into a large mixing bowl, and add the sugar, salt, and butter.
  3. Stir until butter melts.
  4. Cool to lukewarm and add the beaten egg.
  5. Combine the yeast with the 1/2 cup lukewarm water and 1 tsp sugar. Set aside for 10 minutes. Stir the yeat mix, and then add to the kilk mixture.
  6. Beat in 1/2 of the flour and mix well.
  7. Add the remaining flour and mix.
  8. Turn the dough onto a floured bowl and knead for 8-10 minutes.
  9. Shape into a ball, and place into a grease bowl, cover, and allow to rise until double.
  10. Punch down, and divide into 3 portions.
  11. Roll our each portion 1/4 inch thick.
  12. Cut into 3 inch circles.
  13. Place on cornmeal sprinkled baking sheet, brush tops with water and sprinkle with cornmeal.
  14. Cover pan with wax paper, and allow to rise until doubled.
  15. Cook on a hot ungreased griddle about 6 minutes per side.
