Recipe: English Muffin
- 2 cups milk
- 1/4 cup sugar
- 1 tbsp salt
- 1/4 cup butter
- 1 egg, beaten
- 1 tsp sugar
- 1/2 cup lukewarm (about 100 ° f)
- 1 tbsp active dry yeast
- 6 1/2 cups flour
- Scald the milk.
- Pour into a large mixing bowl, and add the sugar, salt, and butter.
- Stir until butter melts.
- Cool to lukewarm and add the beaten egg.
- Combine the yeast with the 1/2 cup lukewarm water and 1 tsp sugar. Set aside for 10 minutes. Stir the yeat mix, and then add to the kilk mixture.
- Beat in 1/2 of the flour and mix well.
- Add the remaining flour and mix.
- Turn the dough onto a floured bowl and knead for 8-10 minutes.
- Shape into a ball, and place into a grease bowl, cover, and allow to rise until double.
- Punch down, and divide into 3 portions.
- Roll our each portion 1/4 inch thick.
- Cut into 3 inch circles.
- Place on cornmeal sprinkled baking sheet, brush tops with water and sprinkle with cornmeal.
- Cover pan with wax paper, and allow to rise until doubled.
- Cook on a hot ungreased griddle about 6 minutes per side.
