Recipe: Fancy Egg Scramble
- 1 cup (4oz) diced Canadian bacon
- 1/4 cup chopped green onion
- 3 tbsps butter or margarine
- 12 eggs, beaten
- 3 oz can mushrom stems and pieces, drained
- 1 recipe cheese sauce (recipe to follow)
- 4 tsps butter or margarine, melted
- 2 1/4 cups soft bread crumbs
- 1/8 tsp paprika
- Preheat oven to 350 degrees.
- In large skillet, cook Canadian bacon and onion in 3 tbsps butter until onion is tender but not brown.
- Add eggs and scramble just until set.
- Fold mushrooms and cooked eggs into cheese sauce.
- Turn into 12 X 7 X 2 inch baking dish.
- Combine melted butter, crumbs and paprika; sprinkle on top of eggs.
- Cover and chill (can be made a day ahead).
- Bake for 30 minutes or until bubbly.
Cheese Sauce
- 2 tbsps butter or margarine
- 2 tbsps flour
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 cups milk
- 1 cup shredded Cheddar cheese
- Melt butter; blend in flour, salt and pepper.
- Add milk.
- Cook, stirring until bubbly.
- Stir in cheese until melted.
