Recipe: Fish A La Newburg
- 1 cup cooked flaked fish
- 1 egg yolk
- 1 tbsp cornstarch
- 2 cups milk
- salt and pepper to taste
- 2 tbsps wine
- butter the size of a walnut (2 tbsps approx.)
- dash of ground nutmeg
- Put the flaked fish to heat in a double boiler.
- Mix the egg yolk and cornstarch until light.
- Gradually add the milk while stirring.
- Add this mixture to the fish.
- Put fish over brisk heat, season with the salt, pepper, and nutmeg.
- Stir and cook until the sauce is as thick as molasses.
- Then drop in the butter, chopped fine, then add the sherry or other wine.
- Serve on squares of thin delicately browned toast on a heated platter.
