Recipe: Fish Chowder
- 1 lb haddock fillets
- 2 onions, chopped
- 1/4 lb butter or margarine
- 4 tbsps flour
- 3 medium potatoes, diced
- 16 oz clam juice
- 1 quart milk
- 1 bay leaf
- 1 stalk celery
- 1/4 tsp thyme
- salt and pepper to taste
- Cut haddock fillets into 1 inch squares and set aside.
- Saute onions in butter until transparent.
- Add flour and blend well and cook for 1-2 mins.
- Add potatoes, clam juice, about half the milk, bay leaf and celery.
- Simmer 15 mins.
- Add fish and simmer 10 mins more.
- Add remaining milk, bring to boil.
- Add thyme, salt and pepper; mix well.
- Discard celery stalk and bay leaf before serving.
