Recipe: Fish Imperial
- 2 cups cooked fish, flaked
- 3 eggs
- 1 cup milk
- 1 cup fish stock
- 1/4 tsp black pepper
- strips of pimento
- 2 tbsp dried parsley flakes
- 1/2 tsp onion powder
- 3 tbsps vinegar
- 1 tsp fine sea salt
- Preheat oven to 225° F.
- Combine fish flakes and vinegar.
- Whip the egg whites until stiff and then set aside.
- Beat the egg yolks, add milk, fish stock, salt, pepper, onion powder, parsley, fish flakes and mix well.
- Pour into a greased baking dish and garnish with strips of pimento.
- Set in a pan of warm water and place in oven.
- Bake slowly about 30-45 mins. or until silver knife when inserted comes out clean.
