I know you were looking for a pork chop recipe by Justin Wilson but I have a tasty baked pork chop recipe I like to make.

Start with really thick pork chops (any where from 1 inch to 2 inches thick). I like to get them at a butcher. Generously sprinkle pork chops with garlic powder, onion powder, celery salt, ground pepper and paprika (used for color). I also like to take a large sweet onion and hollow out a bit of the center not going all the way through to the bottom. Place a pat of butter in the hollowed out part of the onion and sprinkle top of onion with salt and pepper. Place seasoned pork chops and onions in a baking pan and cover. Cook at 350 degrees for 30-45 minutes. Remove the cover the last 15 minutes of cooking to allow browning.
