Oatmeal Sugar Cookies
1 cup sugar
1 cup shortening or butter
2 eggs
1 teaspoon pure vanilla extract
1/2 teaspoon salt
1 cup oats
1/2 cup raisins
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
Cream together the sugar, shortening, eggs and vanilla extract. Mix in remaining ingredients and refrigerate for four to five hours. Heat oven to 375° F. For each cookie, place about a teaspoon of mix on ungreased cookie sheet. Bake about 10 minutes makes 4 1/2 dozen Oatmeal Sugar Cookies.
