Default French Toast Santa Fe

1 loaf (three day old of homemade type bread)
1 cup light cream
4 eggs
1/4 teaspoon salt
1/2" hot canola oil
confectioners' sugar
applesauce, current jelly, honey or maple syrup


From a three day old loaf of unsliced homemade type bread, cut three slices three-quarter inch thick. Trim the crusts and cut each slice into two triangles. Combine 1 cup light cream with 4 eggs, well beaten, and 1/4 teaspoon salt. Dip the triangles into the mixture, letting them absorb as much of it is possible. Fry the triangles in 1/2" hot canola oil (at about 325°), turning them once until they are golden brown. Pour the triangles into a shallow baking pan and bake them in a hot oven (400° F.) for three to five minutes or until they are well puffed. Drain French Toast on absorbent paper and sprinkle toast with confectioners' sugar. Serve the French toast at once, with applesauce, currant jelly, honey or maple syrup. Recipe serves three.
