Those look good! Those are one of my favorites. I love making muffins and now that fall is here I will be baking much more!
May I add a few tips about muffins?
Whisk dry ingredients in one bowl; combine wet ingredients in another bowl - folding your wet ingredients into your dry. You do not want to beat - you want lumps in your batter. You do not want a shiny batter. Even some spots of unloosened flour are okay! Leaving a few lumps in your batter will give you muffins that are more tender. Overmixing your batter develops the gluten in the flour and causes toughness and tunnels. Proper mixing will give you airholes that are evenly spaced and round - making your muffins light and fluffy.
Remember to never fill your muffin tins more than 2/3 full. This will give you the nice rounded tops you want. Too much batter in the cup will give you a flat top - there is not enough room in the cup for the batter to expand properly. If you don't have enough batter to fill all the muffin cups, fill the remaining cups with water - halfway - before baking. Empty muffin cups will warp and burn without the water in them.
