I don't fish personally, but vacation in a similar location north of the outer banks, Assateague Island. It's famous for the ponies, but more importantly it's one of the rare undisturbed beaches on the east cost of the US. About 30 miles long and full of wildlife (and mosquitos!).

There is lots of surf fishing there on Assateague for the fish you list which wouldn't be surprising since it's not too far north of there.

I'd love to vacation at the Outer Banks of NC. It's about twice as far from our location then our normal beach place, so we stick to our native habitat. You'll probably have a nice quiet time there since most of the vacationers are gone back home. Enjoy yourself!

As for cooking ideas for the fish you catch, if I had a clean one, I'd hit the fish proportional to a mix of 1/4 tsp granulated garlic, 1/4 tsp onion flakes, 1/4 tsp paprika, and 1/8 tsp chili powder for a sorta southwestern flair. Maybe a little butter too.
