Wilt it down, season with salt and pepper; beat my eggs; pour over; cook one side and flip; cook the other side. If you can't flip - place in the oven to cook the top.

If you want to try to flip - don't flip over the stove - you miss and you have one heluva mess!

I also love various peppers and veggies and onions - just any mix I feel like having. Even leftover buttered broccoli, etc. can be "recycled" for these.

You can add crumbled sausage of choice (breakfast, Italian, polish, brats, etc) - anything goes.
