These are really easy and quite tasty. Will make these tonight and serve them with salad.
They freeze very well, BTW.
2 cups bread crumbs
1/4 cup chopped parsley
1/2 cup minced onion
2 cans tuna
1 cup consomme
2 eggs
1/2 cup mayonaise
2 Tbsp. mustard
2 tsp. poultry seasoning, optional
Corn flake crumbs
Mix all ingredients. Shape into 1-inch balls. Roll in corn flake
crumbs. Bake at 450 degrees F until lightly browned. Makes 75. Can be
frozen.
