I love garlic mashed potatoes.

I boil potatoes with 3-4 cloves of garlic, then mash them and add 1/2 cup or so of sour cream. I drizzle the top with olive oil and sprinkle with parmesan cheese, then bake for 20 minutes or so. YUM
